Our State Fair

September is Kansas State Fair time.  I am a little late in posting these, but I thought you would enjoy a recipe from my bread basket.  (It’s the one that got 3rd place on the second shelf.)

Cinnamon-Raisin Bread
¼ cup warm water
1 Tablespoon dry active yeast
Combine in a small bowl and stir to dissolve.
2 cups whole wheat bread flour
1 cup milk (scalded)
¾ cup orange juice
½ cup sugar
¼ cup oil
1 egg
1 ½ teaspoons salt
¾ cup raisins
Combine in a large mixing bowl and mix well.  When cooled to lukewarm, add yeast mixture and mix.
4 ½ -5 ½ cups bread flour
Add enough flour to make a soft dough.  Knead 8-10 min until smooth.  Place in a greased bowl and let rise until doubled.  Punch down and divide in half.  Roll into rectangle.
1/3 cup sugar
1 Tablespoon ground cinnamon
Combine and divide in two parts sprinkle evenly on the two rectangles of dough.  Roll up, jelly roll fashion, and place in greased 9×5 loaf pans.  Let rise until doubled.  Bake in 350 degree oven for 30 minutes.  Leave in pans 5 minutes and then remove and let cool on wire rack.
